Edinburgh businesses team up for 'disruptive and delicious' hot honey whisky collaboration
Two Leith businesses have come together to launch a ‘disruptive and delicious ‘ whisky.
Leith based Woven Whisky and pizza restaurant Civerinos, recently named seventh best pizza in the world by Time Out magazine, have announced the launch of hot honey - a whisky collaboration which is set to defy the conventional rules of whisky partnerships.
United by Edinburgh origin and respective obsession with flavour, Woven Whisky and Civerinos have previously collaborated on a chilli-laced honey drizzle, infused with Woven Homemade whisky - an immensely popular limited edition pizza topping. Now Woven is reversing the brief and blending a whisky around the flavour profile of hot honey.
Fusing Woven’s blending expertise with Civerinos’ flavour-first kitchen mentality, Hot Honey whisky combines North British Grain whisky with blossom honey, natural guajillo spice and green jalapeño chillies to create a disruptive and delicious taste profile.

Pete Allision, co-founder and whisky maker at Woven Whisky, said: “The best collaborations start organically. I was happily munching some Civerinos Pizza in Brown’s of Leith when the chef asked if I wanted to try some hot honey pizza drizzle they’d infused with our whisky, as soon as I tasted it my mind started plotting what it could become if we flipped it into a hot honey infused whisky.
“We asked Civerinos if they’d help us build a whisky around the hot honey flavour profile and after some tastebud-shedding creative sessions, we had tasted enough to understand that the concept had legs. That creative reversal is what made this work.”
Michele Civiera, founder of Civerinos, said: “Civerinos has always been about community, from the people we work with to the ingredients we use and the neighbourhoods our restaurants sit in. Partnering with Woven felt natural because we share the same space in Brown’s of Leith, and the more we hang out and cross pollinate the more we realise our parallel paths of flavour obsession in pizza and whisky had potential to cross over in a fun and delicious way.
“This isn't a whisky with our logo slapped on it. It's a proper collaboration where both sides brought something the other couldn't do alone. We understand heat and balance in the kitchen just as Woven pursues harmony and balance in the blending room."
With Woven’s whisky and coffee collaboration, WXC, winning World’s Best Flavoured Whisky at the World Whisky Awards, Woven x Civerinos Hot Honey is the latest example of Woven's collaborative approach to contemporary whisky.
Priced at £40 per 700ml bottle, Woven Hot Honey is available from wovenwhisky.com, at Brown’s of Leith and across all Civerinos locations (Finnieston, Portobello, Leith, Stockbridge, Forrest Road, Hunter Square and Lost Shore) now.
At its launch at Brown’s of Leith, the product is being premiered with two signature serves - the Hot Honey Lemonade Highball and the Hot Honey Whisky Sour - designed to resemble a spicy margarita with a distinctly Scottish twist.
