- A good squirt of lemon juice (fresh or bottled)
- Black pepper to taste
Serves: 4 Difficulty: Easy Time to cook: 5 mins
Method
Orkney pâté
1. Mix all the ingredients together with a fork until you get the consistency that you want – coarse or smooth.
2. Serve straight away or store in the fridge in an airtight container for up to three days.
3. Serve with bread, crackers or oatcakes.
Tip: Tinned tuna or salmon is a great alternative here. You can also top up the soft cheese with cream or crème fraiche if needed and if you used a fresh lemon, grate zest over as a garnish.
