Mary Contini recipe: DIY cookies

Mary Contini of Valvona & Crolla enjoys the trials and tribulations of being a nonna as she gives us this fun recipe for DIY cookies.
The kids love to make their own cookies and store them for after supper. They can do everything themselves – weigh the ingredients, mix the dough in a big bowl with a wooden spoon, roll the mixture into balls and lay on a baking sheet. They love the magic when the tray comes out of the oven and the balls of dough have turned into cookies. Makes around 8-12 cookies
Ingredients
- 125g soft butter
- 150g soft brown sugar
- 1 large egg
- 100g plain flour, sieved
- 50g cocoa powder
- ½ tsp bicarbonate of soda
- selection of chocolate chips, Smarties, peanuts, raisins etc.

DIY Cookies
1 Pre heat the oven to 190C/Gas Mark 5.
2 Put the butter and sugar into a bowl and beat them together until the mixture is soft and creamy. Beat the egg, add it to the bowl and mix it all together.
3 Add the flour, cocoa powder and bicarbonate of soda and beat again until it’s a sticky dough. Add the fillings – three tablespoons worth in all (the kids can choose how they want to make their own recipe).
4 Add a little flour to your hands and take about half a teaspoon of the mixture and roll it into a round ball. Lay these shapes onto 2 greased baking trays, making sure they’re spaced well apart as the cookies will spread out about 3 times their size.
5 Bake for 12 minutes, then remove from oven and leave to cool. Store them in a cookie tin and they should last up to 3 weeks.
